Mediterranean Tabouli

1 cup cooked quinoa

1 bunch curly parsley, finely chopped

2-3 green onions, finely chopped

2 cups chopped tomatoes (halved cherry or grape tomatoes work too)

1 cucumber, quartered lengthwise and thinly sliced (this can be peeled first if you don’t enjoy the skin)

1/4 cup fresh lemon juice

1/4-1/2 tsp Apple Cider Vinegar (according to how sour you like it)

1/4 cup extra virgin olive oil

1 tsp sea salt

1/2 tsp vegan bouillon

1/8-1/4 tsp ground black pepper

2-3 mint leaves, finely chopped

In a large mixing bowl, mix together olive oil, lemon juice, vinegar, bouillon, salt, pepper, and mint leaves. Let it marinate for 5 minutes. Add green onions and parsley and mix it well. Then add quinoa, tomatoes, and cucumber. Stir the entire mixture of ingredients together well and refrigerate for at least an hour. Enjoy with chips, as a side dish, stuff a pita, make a dolma (stuffed grape leaf) or stuff it into mushrooms.
