Gluten-Free Bread

3 cups Gluten-Free flour

1 Tbsp yeast

2 tsp salt

1 ¼ cups warm water (about 90 degrees), divided

¼ c. ground flaxseed meal

1 Tbsp psyllium husk powder

1 tsp Apple Cider Vinegar (ACV)

3 eggs, beaten

¼ cup honey

¼ cup olive oil

In a small bowl, add ¼ cup of the water, a dollop of honey and the yeast. Stir and set it aside to “proof” or to foam. In a large mixing bowl, add flour and salt and mix thoroughly. In a blender, add the remaining cup of water, flax, psyllium powder, and ACV. Blend these ingredients until they are fluffy. Add the olive oil and honey to the blender and blend these well into the “fluffy” mix. Finally, add beaten eggs and blender mixture to the flour mixture and mix until moist. Then add the proofed yeast and mix everything well. Knead the dough for 6 minutes. Form them into smooth loaves and let them rise for at least 45 minutes. Once the dough has risen to fill into the edges of the bread pan, bake it on 350 degrees F for about 35 minutes or until golden brown around the edges and the top.
