GF Pancake Mix
5 cups GF oat flour
5 cups all-purpose GF flour (Bob’s Redmill 1:1 GF flour is great!)
1 cup vanilla protein
1/3 cup baking powder
2 tsp sea salt
½ cup sucanat or healthy sweetener (optional)
1 cup flax seed meal
Yields about 18 cups mix and fits into a #10 tin can or old protein container
To make pancakes:
To make the batter: Mix 1 cup pancake mix with 1 cup water and 1 egg. Mix well.
To cook: Preheat a skillet to a low to medium heat with non-stick oil (see recipe) and pour about ¼ cup batter into the pan. Let it cook on one side until it looks bubbly. Then flip the pancake and cook until golden brown. Remove from the pan & serve with healthy, yummy toppings!
For waffles:
Mix 2 cups pancake mix with 4 whipped egg whites and 1 to 1-1/2 cups water. Mix well and put into waffle iron to cook. Remove from the waffle iron when done & serve with healthy, yummy toppings!
Freeze extra waffles for easy breakfasts
