Creamy Gravy GF/ DF
1/2 can coconut milk (stir well before dividing)
2 cups vegetable or meat stock
2 cloves garlic, minced
1 tsp fresh lemon juice
1/4 cup chopped onions (optional)
1 Tbsp vegan butter or olive oil
3 Tbsp GF flour
1 tsp cornstarch or arrowroot
1 tsp basic bouillon powder
salt and pepper taste
In a saucepan, pour in the oil or melt the vegan butter. Saute onions and garlic until slightly golden. Add the stock and stir well. Whisk in the bouillon powder, lemon juice, and salt and pepper to taste. Then whisk in the coconut milk and turn the temperature to low to simmer.
In a small bowl, combine the GF flour with the cornstarch and stir well. Whisk in just enough water to make a thick, smooth paste. Add this mixture slowly to the gravy while whisking until it thickens to the desired consistency. Serve this gravy over vegetables, mashed potatoes, or anything that sounds great!
