Bechamel sauce

1 Tbsp vegan butter
1 Tbsp olive oil
1/4 cup GF flour
1/2 can coconut milk
1/2 cup rice milk
1/2 tsp salt
1/2 tsp multi-colored pepper
1/4 tsp nutmeg
In a saucepan, over low to medium heat, melt butter and add oil. Stir well. Add the flour and whisk constantly with skill, as to not brown the mixture. Quickly add the rice milk and coconut milk and whisk them in until the sauce is smooth. Turn the heat down to simmer the sauce on low, while whisking constantly. It may take 7-10 minutes to fully cook the sauce while whisking constantly. Make sure to remove lumps if they were not mixed in properly. Season with salt, pepper, and nutmeg.
This is a great sauce for vegetables, especially asparagus.
