Italian Salad Dressing

1 cup olive oil

2 Tbsp cup pine nut pesto (optional for a creamy taste)

1/2 cup Apple Cider Vinegar or 3/4 cup fresh lemon juice

1/4 honey (can be substituted with 2-3 Tablespoons xylitol)

1 tsp salt

1 clove garlic

1 tsp fresh, minced onion

1 tsp dried basil or Italian seasoning*

 

Blend all ingredients in a high-speed blender until smooth and store in the fridge. Enjoy for 1-2 weeks if kept cool.

 

*1 Tbsp fresh & minced basil may be folded in after blending for extra flavor

Dairy-free Ranch Dressing:

1 cup raw cashews

2 Tbsp vegenaise

1/2 cup dairy-free milk

3 Tbsp lemon juice

1 clove fresh garlic

1 tsp salt

1/2 tsp black pepper

1/4 tsp garlic powder

1/2 tsp onion powder

1/2  tsp yellow mustard

1/4 tsp paprika

2 Tbsp fresh parsley, chopped

1-2 Tbsp fresh dill (or 1-2 tsp dried dill according to how strong you like this flavor)

2 Tbsp chopped green onion/ chives

In a blender, blend the first 5 ingredients on high speed until the mixture is smooth and creamy.  Then blend in the salt, pepper, garlic powder, onion powder, mustard, and paprika and blend again until smooth. Simply pulse in the remaining ingredients of fresh chopped herbs until they are barely mixed in. Refrigerate and enjoy. This keeps in the fridge for about 1 week.
