Dairy-Free Fettuccine Alfredo
1/2 package gluten-free Fettuccine noodles
1 can coconut milk
1/2 cup vegan parmesan cheese (dairy-free available)
2 cloves garlic, minced
1 Tbsp finely chopped onions
1 Tbsp vegan butter or olive oil
2 tsp GF cornstarch
2 Tbsp water
1 cup chopped spinach (optional)
1 Tbsp chopped fresh basil or parsley
salt and pepper taste
Prepare Fettucine according to package directions, drizzle with olive oil enough to gently coat the pasta and set it aside.
In a saucepan, pour in the oil or melt the vegan butter. Saute onions and garlic until slightly golden. Add the coconut milk, stir well, and turn heat to low in order to simmer sauce until it bubbles, stirring occasionally. In a small bowl, add the cornstarch to 2 Tbsp of water and whisk until it starts to thicken. Pour this into the sauce and stir until it thickens. Then add the parmesan and whisk until it thickens again. Salt and pepper the sauce to taste while stirring constantly on low heat. Fold in the chopped spinach and herbs and remove the pan from the heat. Stir GF Fettucine noodles into the sauce and serve it up!
